Preheat oven to 375ºF
In a large bowl, begin the crust & crumble. Combine sugar, brown sugar, baking powder, salt, cinnamon, and flour. (You can do this with a fork or wooden spoon)
Once combined, add cubed butter to the bowl and cut in with a pastry cutter.
After the butter chunks are ~1/4" - 1/2" thick, add the egg and vanilla. Mix until thoroughly blended. The dough will be try, but will hold together if pinched.
Place roughly half of the dough mixture into a 9x13" baking pan lined with parchment paper. Set aside.
In a medium bowl, combine all the filling ingredients and toss until all the apples are covered in the mixture.
Spread the apples atop the crumble mixture that currently sits in the pan.
Cover the apples with the remaining crust & crumble mixture.
Bake for 45 minutes or until the top is golden brown. Cool before cutting/glazing.
