Glazed Apple Pie Bars

I sat on this recipe a while and thought, “What the heck am I going to say about these dang Apple Pie Crumb Bars”?

Then it dawned on me – everyone is probably thinking (as one typically does when clicking on a food post), “GET TO THE DANG RECIPE, WOMAN!”

So here you are. They’re crumbly, they’re buttery, they’re super cinnamony, they’re not very pretty in pictures. But they taste DELISH. If you’re an apple pie lover, these are for you. Not to mention, these little guys are the perfect little dessert to take to that wine night or holiday gathering.

Glazed Apple Pie Bars

Servings: 12 bars

Ingredients

For the Crust & Crumble

  • 1/2 cup granulated sugar
  • 1/2 cup dark brown sugar
  • 1 tsp baking soda
  • 3 cups all-purpose flour
  • 1-2 tsp cinnamon
  • 1/4 tsp salt
  • 2 sticks cold, salted butter cubed
  • 1 egg
  • 1/2 tsp vanilla extract

For the Filling

  • 3-4 larged apples peeled & thinly sliced
  • 4 tbsp all-purpose flour
  • 1/2 cup dark brown sugar
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg optional
  • 1 lemon

For the Glaze

  • 1 cup confectioners sugar
  • 3 tbsp 2% or whole milk
  • 1/2 tsp vanilla extract

Instructions

For the Bars

  • Preheat oven to 375ºF
  • In a large bowl, begin the crust & crumble. Combine sugar, brown sugar, baking powder, salt, cinnamon, and flour. (You can do this with a fork or wooden spoon)
  • Once combined, add cubed butter to the bowl and cut in with a pastry cutter.
  • After the butter chunks are ~1/4" - 1/2" thick, add the egg and vanilla. Mix until thoroughly blended. The dough will be try, but will hold together if pinched. 
  • Place roughly half of the dough mixture into a 9x13" baking pan lined with parchment paper. Set aside. 
  • In a medium bowl, combine all the filling ingredients and toss until all the apples are covered in the mixture. 
  • Spread the apples atop the crumble mixture that currently sits in the pan. 
  • Cover the apples with the remaining crust & crumble mixture.
  • Bake for 45 minutes or until the top is golden brown. Cool before cutting/glazing.

For the Glaze

  • In a small bowl, whisk together confectioners sugar, milk, and vanilla extract. Drizzle atop of the bars once cooled.
